In an attempt to use up an overripe banana and also create a quick breakfast munchie, I came up with these uber-nutritious cookies. Nutrition facts are below if any of you healthy folk are interested.
Banana-Flax Breakfast Cookies
1/4 c. butter, softened
3/4 c. brown sugar
1 egg, lightly beaten
1/2 tsp. vanilla extract
1 ripe banana, mashed
1 1/2 c. whole wheat flour (I substituted spelt flour for part of the whole wheat)
1/2 c. ground flaxseed
1/2 tsp. salt
1/4 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
Preheat oven to 350. Cream softened butter and brown sugar; beat in egg and vanilla. Stir in banana. In separate bowl, combine flour, flaxseed, salt, cinnamon, soda, and baking powder. Add creamed mixture and combine well. Drop by tablespoonfuls onto greased baking sheets; bake 9-10 minutes.
Makes approximately 2 dozen cookies.
